Nicaragua Colibrì Azul is a real specialty coffee, this specialty coffee is produced in the Jinotega area, which is part of the Cerro Dantalì nature reserve. This area is well known for its natural biodiversity. Due to its tropical climate with heavy rainfall, this area has excellent conditions for developing the qualities of coffee.
The nature reserve is an important project for the whole region, more than 250 people live there
bird species, 4 of which are endangered, such as the blue Colibri Azul.
Coffee trees in this area grow under the shade of phenomenal tropical trees. Coffee fruits are picked by hand. The cherries are washed and left to ferment in water tanks for at least 24 hours. As a result, coffee develops very bright acidity and colorful fruit flavors.
