Mexico Bromelias coffee originates from the highland regions of Mexico, where smallholder farmers cultivate coffee under the shade of forest ecosystems. Like other high-quality Mexican coffees, it benefits from volcanic soils, a mild climate, and clearly defined wet and dry seasons—conditions that create an ideal environment for producing clean and well-balanced Arabica.
The beans are typically grown at altitudes between 1200 and 1800 meters, often qualifying as “high-grown” (Altura). These elevations slow the maturation of the coffee cherries, resulting in denser beans with more developed sugars and aromatic compounds—key elements of a complex and refined flavor profile.
The washed process is the most common in Mexico and is used for this lot as well. In this method, the fruit pulp is removed before drying, enhancing clarity, balance, and a delicate, well-structured acidity in the cup.
